Chocolate Cranberry Biscotti

Hi Mom! Here is that recipe. Thanks for the reminder email...I've had this cookbook out for the last 4 days to get the recipe to you. So here it is!

1 tsp. coffee, ground (Make strong shot of coffee by putting 1 tsp coffee into 1 Tbsp boiling water)
2 1/2 cups flour
3/4 cup unsweetened cocoa
1 Tbsp baking powder
1/2 tsp salt
1/3 cup chocolate chips
1/2 cup butter, softened
1 1/3 cups sugar
3 large eggs
1 cup dried cranberries (or cherries if you prefer)

Preheat oven to 350. Grease cookie sheet and set aside.
In a cup put ground coffee in 1 Tbsp of water. Set aside.
In medium sauce pan over low heat melt chocolate and set aside.

In a mixing bowl, with mixer at medium speed, beat butter and sugar until fluffy. (Hmmm...fluffy? Maybe creamy?) At low speed add eggs, one at a time, blend. Add chocolate and coffee (press coffee so you have no grounds in your biscotti) and beat until blended. Add flour mixture and beat until blended.

Mix in cranberries by hand.

By hand divide dough into half and put on cookie sheet in two long loafs. Make sure they are 3 inches apart since they increase in size while cooking.

Bake at 350 for 30 minutes. Cool on a rack for 10 minutes. Transfer to cutting board and cut a loaf into slightly diagonal pieces (approx. 1/2 inch thick.) Place slices, cut side down back onto the cookie sheet. Return to oven and bake an additional 15 minutes to dry biscotti.

Transfer to wire rack and allow to cool completely. Biscotti will harden as it cools. They will stay fresh in a cookie jar for up to 2 weeks.

Enjoy!

Thanks for the recipe - I have everything but the cranberries so I will get them in the morning and see what happens. Looks good! Donna and I went to the Sanctuary for lunch to day on Kiawah Island. It was one of those incredible lunches that was so good -- We were tasting food for a bride's luncheon she is having in two weeks for her neice. The restaurant is right on the ocean and the view was fabulous. They brought us a sample of this months desserts and of couse even though we were past full we had to try them. Then we "waddled" around and looked at all their Christmas decorations. Nice afternoon! Take a look - http://www.kiawahresort.com/accommodations/the-sanctuary/ :)I think we should all stay there next Christmas!

Is this what you used for Abigail when she was teething?

That resort is beautiful! I agree...lets stay there the whole time Joel and I are in town. I'm sure it's affordable! : )

And Erin, it isn't the biscotti. But I can give you that recipe if you'd like. It kind-of breaks apart as the baby chews it, it's pretty messy, but A loved it!
