We have added 2 yummy
recipes to our kitchen that we just had to share. No offense if you don't like them or ever use them. The microwavable muffins are so yummy and quick to make if you're running out the door and since Jon is watching
cholesterol the sausage is a great substitute for pork. I make them up and stick them in press n seal stuff and then keep them in the freezer. We just pull out what we want for that meal. We also do them in the microwave not on the stove.
Bran Muffins (40-48)1 cup water
3 cups all bran cereal *
½ cup butter
1 ½ cups sugar*
2 eggs
2 ½ cups unsifted all-purpose flour
2 tsp baking soda
2 cups buttermilk
In a 1-cup measure, hear water to boiling (approx 2 to 2 ½ min)
Place bran cereal in covered storage container. Stir in boiling water until moistened. Add butter and let set until softened. Stir in sugar and eggs; beat well. Blend in flour, baking soda and buttermilk. Spoon into paper lined custard cups or microwave muffin dish, filling half full. Using unbleached paper liners keep the muffins from sticking to the paper. Store any remaining batter in the refrigerator for up to 6 weeks, using from it as desired. Cook muffin, uncovered, until no doughy (shiny) spots remain.
2 muffins – 1min
4 muffins – 1 min. 45 sec
6 muffins – 2 min.
The times are approximate--it depends on your microwave.
You can add your own extras:
Cinn; ground nuts, 5 Tbs flaxseed meal (ground flax); crasins; dates; seeds; etc
*We use Nature’s Path--Smart Bran w/ psyllium & oat bran b/c it doesn’t have any high fructose corn syrup. Also, ¾ c of Agave nectar or honey can be substituted for the sugar. We put in all the extras in our muffins. Yummy!!
Turkey (or Chicken) Apple SausagesThe best way to make these are into small breakfast size sausages.
1 lb ground organic turkey or chicken (thighs work great)
3/4 C diced organic dried apples
1 tbsp maple syrup or honey
1 tsp ground black pepper
1 tsp sea salt
1/4 tsp Allspice (Zane' note: a little goes a long way - I think this is the secret ingredient that makes them taste SOOO good!)
2 tablespoons dried Sage
Mix all ingredients well in a medium size bowl. You will find your hands work the best in mixing ground meat. Preheat a large pan with enough coconut oil or olive oil to cover the bottom. Shape the patties into small patties ( Two tablespoons worth of the mixture, flattened, makes a nice size patty that cooks easily.) Cook until one side is crusty and browned, and it looks like it is cooked half way up the sausage, turn over, and cook until the other side is browned as well. You may have to cook these in several batches. Just make sure the middle is cooked and serve!
